A Valençay style, ash rind, soft ripened cheese made from goats milk aged 2-4 weeks. Coated in ash to help the rind develop, these beauties grow a nice layer of snow white mold which breaks down the cheese paste and leaves a deliciously gooey wheel. Enjoy with your favorite fruit preserves and french baguette!
